Carapulcra (Dehydrated Potato Stew)
$0
Born from a rich exchange of Inca, European, and African cultures, this beloved dish traces its origins back over 500 years. Carapulcra is a hearty pork and potato stew made with its star ingredient: papa seca (dehydrated potatoes imported from Peru). We slow-cook these potatoes with Peruvian chili peppers, peanuts, and aromatic spices like cloves and cumin. The stew is served with Sopa Seca, a flavorful pasta dish from Chincha where spaghetti is cooked directly in a broth of achiote, basil, and parsley until all the liquid is perfectly absorbed.
